The Menu!

Following the ceremony, we have a cocktail hour of 6 passed Hors D'oeuvres, 2 food displays and 2 Chef Stations.  Here are the front runners at the moment:

Cold:
Shrimp with Cantaloupe Dipping Sauce
Orange Glazed Chricken Lettuce Wraps
Assorted Sushi rolls

Hot:
Crab Cakes with Spicy Remoulade
Prosciutto Wrapped Scallopw with Fennel Crema
Chricken Empanadas
Mini Chicken Cordon Bleu
Petite Lamb Chop Looipops

(I know this list has 8 passed, but we're working on narrowing it down still)

Two Chef Stations: 
Pasta Station:
Pasta-Fuscilli, cavatelli, whole wheat penne pasta
Sauces: Basil pesto, tomoate and basil and creamy mushroom cause
Accompaniments - Shrimp, Chicken, Roasted Porotbello Mushrooms, Pancetta, Parmensan Cheese, Herbs, Spinash and white beans

Flat Bread Station:
Margherita - tomata, mozzarella and basil
Prosciutto, Gorgonzola, Fig Marmalade and Rosemary Olive oil
Philly Cheese Steak with Filet Mignon, Caramelized Onion and Fontina Cheese

(Also in the running for chef station:  Mashed Potato Station - but I think I'm getting vetoed here)

Food Displays:

Antiopasto Bar with assorted imported Italian meats, cheese, marinated mushrooms, roasted red peppers, mixed olives, marinated seasonal vegetables and beans, caprese salad and marinated white anchovies

Dim Sum Display:  Bamboo streamer baskets filled with steamed Pork, shripm and vegetable wontons, assorted dumplings, sui mai and pot stickers, and assorted Asian dipping sauces.

Dinner will begin with an appetizer, which we cannot agree on yet... the tasting will decide

Followed by a classic Caesar Salad - crisp romaine, creamy parmesan, croutons and anchovy dressing...

Dinner will include a meat or poultry choice...

Top 2:
Pan Roasted Filet Mignon with Balsamic and Thyme or Grilled New York Strip with Mushroom Red Wine Sauce

Sauteed Chicken Breat with Roasted Garlic Jus or Pan Roasted Chicken Breast with Dijon Tarragon Sauce

All served with seasonal vegetables and starch

Dessert:

Wedding Cake

And a Viennese Display to include Miniature Eclairs, Petit Fours, Bread Pudding with Creme Anglaise, Assorted Fruit tarts, Miniature Cheesecakes, Chocolate Mousse, Cakes, Pies and Tarts with Freshly sliced fruits and melons and warm chocolate fondue with whipped cream...
